[If Keith's intention had been to keep Zarkon on the defensive, he would have succeeded, because Zarkon doesn't obey his opponents' orders no matter how talented they are. He can tell Keith's intent, but he continues to block his strikes and evade rather than going in for his own killing blow. His bayard retains its singular form as a Galra blade, for now. He has no idea who this person is, or why this attack came, so he's not about to kill him. Zarkon is as skilled with defense as he is with offense.

Zarkon doesn't like the amulet—that kind of technology is more irritating than helpful, considering all the loose transmissions—but it does have his uses. His accidental telepathy made him realize that speaking this way could be useful in a fight. He doesn't have to bother with the physical act of talking, and can focus purely on his bladework.

So he utilizes the amulet again:

Is that what you want? If you tell me why we're fighting, maybe I'll oblige you.

[It's quite possible that someone else could pick up on that transmission, as Zarkon is sending it as more of a thought blast (accompanied by a blast of chill wind) than a directed message. He hasn't gained what could be called "finesse" with using the amulet.]
